Aging 9 months in new 500 L barrels, 50% Syrah & Pineau d'Anis (80/20%) destemmed harvest alcoholic fermentation in fiber tank. 1 punch down per day during the FA (12 days) aging in demi muid barrel for 9 months Total added S02: 20ppm @ bottling
